FACTORY
-Since many generations the Nobile factory works with success
in the olive cultivation sector, obtaining guaranteed quality
products of certain origins.
-The olive production is obtained with techniques that respect
the natural cicles and metabolisms, and that completely
exclude
the use of chemical products.
-The Oil-Mill rises in the storic center of Rosolini , in
the heart of the feudal village where still today survive
very well conserved tracks of the ancient rural civility
and monuments of great archeologic interests.
-Today is the factory able to conciliate the recent production
technologies with the quality judgements that distinguish
a biological extra virgin olive oil , by adopting proceedings
of controlled quality , hygenically safe, and approved by
the most authoritative certification institutes (AMAB).

The crop method of the olives:
The crop is strictly hand-made to guarantee a high quality
oil, how handed us down by our fathers B) The olives crop times:
We select only the olives that are gathered before their
complete maturation (a very important factor to obtain an
extra virgin olive oil of quality and low acidity). C) The olives transport:
It is also important to transport the olives in special
boxes that avoid their heating and fermenting, wich are
the reasons of the formation of moulds. D) The certificated
quality of the manufacturing implants:
The Nobile Oil-Mill uses an entire repart exclusively for
the manufacturig of the olives that come from certificated
biological coltivations.

-The
final rinsing with clear stream water , the "cold squeezing
process" and the separator's carefull cleaning process
are determinating factors to obtain an oil with elevated
colour, taste and smell features.

GASTRONOMIC
QUALITY
-Our extra virgin olive oil, rich in taste and smell, is
able to dress every kind of dish, cooked or not. His merits
are far more than the simple pleasure.
-His features are known since many centuries and the dietists
of all the world advise it as the best vegetal flavour.
The extra virgin olive oil is not only the most digestible
among the existing oils, it is even the most rich in nutritive
values; we can say that his chemical composition is similar
to the chemical composition of milk.
-Recently the olive oil has attracted the attention of dietists
and nutritionists from everywhere in the world by qualifying
himself as the most important element of the so called "mediterranean
diet".It completes a healty alimentation based on bread,
pasta, fruit and vegetables and fish wich is able to remove
the risks of heart diseases (infarct).
-We reccomend the use of Nobile's extra virgin olive oil
not only for crude dishes, where this oil expresses the
best of it self, but even in all that cooking applications
where long cooking times and fryes request a kind of oil

EXTRA VIRGIN OLIVE OIL'S BIOCHEMICAL SPECIFICATIONS
-Like all the oils, olive oil is part of a large group called
fat lipids made up of carbonium, oxygen and hydrogen who
unroll in our organism many life-impotrant functions:
.Oils have an energetic function, they are structural components
of the cells during the assorbtion of some vitamins(A,D,E,K),they
limit the heat dispersion by thermically isolating our body.
-Unlike animal fats, olive oil does not favour the increasing
of cholesterine and contains in quantity linoleic, linolenic,
palmitic and stearic acids.
-In olive oil, beside fat acids, is even present a small
group of substances wich have important features like reducing
the formation of free radicals and prevent the intestinal
absorption of cholesterine and lowers its levels.
-In the end olive oil influences even positively on the
blood pressure and it has been also discovered that it has
a protective function against tumors.

-Our story of oil-millers and producers starts in the year
1904
-Since then we covered a long way made of passion, experience
and skill, that allows us today to guarantee the absolute
quality of our extra virgin olive oil.

extra virgin olive oil production areas of Sicily, recently
recognized as:

AREA MONTI IBLEI (denomination of protected origin).
-D.O.P. MONTI IBLEI
-The denonimation of protected origin indicates an agricultural
or alimentary product, originating and produced entierly
in a specific area (region, place or town), with particular
quality features due to the geografic ambient even including
natural and human facts.
-The geografic indication is used to indicate an agricultural
or alimentary product, originating in a specific area, of
wich a certain feature can be attributed to his geografic
origin.
The products with geografic indication have not to be necessarily
produced in the indicated area, it is more than enough that
they are transformed there.
-The difference between the two indications, denomination
of protected origin and geografic indication is the following
one:
While for the denomination of protected origin the whole
manufacturing process must be made in the denomination area,
for the geografic indication it is enough that a part of
this manufacturing process is made there, the part of the
process that completes the product. So we can, for example
use raw materials from different regions.

The Nobile olive
oil and the hypogeanic rocky Basilica
In
Rosolini the name Nobile is not only bound to the production
of high quality olive oil ;often an archeological contest
of great importance is associated to this family .
It is a Paleo-Christian Basilica of great storic value.
If we consider the vastity of the dimensions of this structure,
the greatest monument of this kind in Sicily, we can say
that it is a true archeological pearl.
Many famous and international archeologists like P.Orsi,
L.Agnello and A.Messina have studied this hypogeanic monument.In
the feudal village, through the 6th century portal, the
Basilica is the logo of the label on the oil-bottles, we
arrive on the court of Platamone palace .
This portal flanked by the bell tower, belonged to the summer
residence of the feudal Lords, who obtained the in 1712
the authorisation to build the town with the bless of the
Netine authorities.Now nearly nothing remains of Platamone
palace and of the rocky wall.
In the big court in front of the Oil-Mill where this excellent
oil is produced and under the bell tower we find the beautiful
church of incredible value.Entirely excavated in the rock,
the Bizantine Basilica appears to the viewers in her original
structure, even in not more intact. Some pre-existent hypogeical
funeral structures, excavated in the calcareous rocks, gave
origin to the entire 3naves Basilica. We can find some architettonical
imperfections
due to the necessity to implant the church on something
pre-existent;in the right nave are still conserved some
Bizantine elements.The Basilica's 3 naves are delimited
by 8 arch spans based on massive squared pillarsthat give
majesty to the monument.The central nave ends with a big
apse and the last span separes it from the left one by a
blind arch. That allows there the isolation of an irregular
squared hollow, on its roof there was a canopy straight
over a squared funeral monument.
Of this canopy remain a few things, some little archs that
delimits a semisferic dome wich has in the center a stone
ring .On the left wall, near an ancient celebration monument,
we think that people used to lay all the objects used in
a religious ritual on a shell.Little shells dislocated with
regularity let us think that they have been used as light
shelfs .Who built this monument is still a mistery.We suppose
that the architettonic oriental influence have been introduced
by some monotheistich comunity present on the territory.Whit
the came of the Arabians this place was rebuilt.
His Arabian name was "GARU-AS-SALIBIN"or "CAVE
OF THE CROSS".With
the time this name changed in "Rusalini", the
actual pronounce of the growing town.
Today from Rosolini the Nobile oil reaches, very appreciated,
the farest destinations.The Basilica, a cultural good, is
still conserved only by the Nobile family, like the oil
does not belong only to the producers. One has a considerable
storic value and therefor appreciated.The Nobile olive oil,
healty aliment with special nutritional requests is a good
for all.
